Tomato Progression & Chicken Soft Taco Recipe

My mom and dad bought me these two tomato plants for Mother's Day.
It was not the typical gift I was expecting...flowers, a card or dinner.
But my parents know me and knew that I would love them.
and I did ^_^
I've always wanted a garden. I know this isn't a garden but it's a start ;)
Soon these babies shot up and started growing tomatoes!
First the blooms came and then one baby tomato ^_^
I was so excited to see them growing! It was so easy! Just water them every day.

Soon they began to ripen and turn red.


My little girl Jorja, got to pick the first one today :)

They finally made it to the dinner table tonight.
Chicken soft tacos with homemade guacamole dip, lettuce, a little lime juice and my home grown tomatoes :) Everyone said they were so juicy! I usually add green onions but we were out. It's the gift that keeps on giving ;) I ♥ my tomatoes ^_^

~Chicken Soft Taco Recipe~
  1. Boil 4 boneless skinless chicken breast for about an hour. Shred the chicken with two forks in a flat casserole dish.
  2. Cut and remove seeds from 3 avocados then smash them in a bowl.
  3. Add 1 pack of guacamole mix to the smashed avocados then stir well and set in refrigerator until ready to serve.
  4. Chop 2 tomatoes, lettuce and green onions (eyeball it)
  5. Heat up your tortillas in microwave for 15 sec. Take them out and build your soft taco.
  6. I like to layer it as follows...guacamole, chicken, lime juice, lettuce, tomatoes then green onions.
    You can add shredded cheese, sour cream, salsa or whatever you like!

I love your photo journal of your garden; it has inspired me to take a picture of my own now. It has gotten enormous, but I still don't have red tomatoes - yet! Pretty soon though....

We love tacos as well, but I have to say - throw out the guacamole seasoning mix! Add a little lime, garlic chopped fine, chopped cilantro, and a bit of salt. Delicious and healthy!

I know I need to make it that way but I haven't gotten around to it yet. I will try it your way next time. That's awesome that you have five kids as well! It's fun isn't it ;) I'd love to see pics of your garden. This was my first time growing anything on my own so I was fascinated at the growth process! Happy picture taking :)

Ha, I have lots and lots of cherry tomatoes, and now my romas are starting to come I picked 10 yesterday. Gotta love the ease of growing tomatoes, and the abundance they produce. Take care, Carrie
